Cauliflower Protein Pizza

1 Cup Low sugar Spaghetti Sauce (I use Prego Italia Light Smart)
2 Cups "Rice" Cauliflower
1 Cup Fat Free Cottage Cheese
1/4 Cup Egg Whites
1/2 Portobello Mushroom
2 Oz Part Skim Mozzarella Cheese
3 TBSP Physillium Husks (Ground Flax Meal or Wheat Bran)
Sautee cauliflower until translucent
Drain any excess liquid
Combine 'rice', egg whites and cottage cheese
Lightly grease pizza pan (and/or use parchament paper)
Spread mixture thinly
Bake at 450 for 25-30 minutes (until crispy)
Add toppings
Bake until cheese is melted
I'm sure this could be more than one serving - but I ate it all.
The trickiest part of this recipe is getting it crispy! Make sure to cook it long enough so that it's crispy - even if you don't succeed at getting it crispy, it's still delicious!
