Protein Bread

Protein Bread
Cals 96, Carbs 11, Fat 1, Protein 10, Sugar 1, Fiber 4

To be honest, this bread isn't that spectacular when eaten alone. When paired with cream cheese, used for sandwiches or used to dip in eggs, it's excellent. The texture is very doughy and quite lovely!

Picky-Eater LOVES this recipe, toasted and dipped in EVOO and balsamic or made into garlic bread! 



1 Cup Liquid Egg/Whites
1 Cup Oats
1/2 Cup Cottage Cheese
4 TBSP Pea Protein
2 TBSP Psyillium Husks
1 1/2 TSP Baking Powder
1/2 TSP Baking Soda
1/2 Cup Wheat Bran (optional)
1 TSP Salt
Pinch of Stevia

- Preheat oven to 400
- Blend Ingredients (excluding baking powder)
- Transfer into a large bowl, mix in baking powder
- Lightly coat loaf pan with non-stick spray
- Gently place batter into the pan
- Bake for 20 minutes

Makes 8 thick slices


If you don't have a high power blender like the Vitamix, you might want to blend your cottage cheese, liquid egg and oats together, then mix remaining ingredients in a bowl.

Things to do with protein bread:
- Dip it in your eggs!
- Protein Bruschetta 
- EVOO and Balsamic Vinegar
- Open faced sandwich
- Grilled cheese (with low-fat, high protein cheese)
