Protein Waffle

Protein Waffle
Cals 265, Carbs 13, Fat 6, Protein 35, Sugar 1, Fiber 11

I love waffles... most of the protein waffles I've looked at require blended banana or other naturally high carb/sugar sources. I really wanted to have an option that was low in carb/sugar (even if it's natural!). It took some playing around...  and a few very messy attempts... but here it is! Enjoy <3

1 TBSP Almond Flour
3/4 Cup Egg Whites (or 1/2 cup egg whites, 1/4 cup cottage cheese)
2 TBSP Coconut Flour
2 TBSP Stevia
15 Grams of Vanilla Whey Protein (approximately 1/3 to 1/4 scoop)
1 TBSP Psysillium Husks
1/4 Cup Water (or Almond/Coconut milk)

Optional Flavouring:
1/2 TSP Butter
1/2 TSP Maple Extract
Dash of cinnamon

- In a medium sized bowl, combine dry ingredients
- Add cottage cheese and mix, firmly pressing together until cottage cheese is blended (you can also blend the cottage cheese but I find it difficult to get out of the blender when it's under 1 cup)
- Add remaining ingredients.
- Stir until smooth
- Once psyillium husks bind with water, you're ready to make waffles!
- Follow directions on your waffle maker

Makes one serving/two waffles
