PB&J Protein Bread Pudding

PB&J Protein Bread Pudding

Jam Topping

1 TBSP Chia Seeds
2 TBSP Water
1 Cup Berry of choice (I used Raspberry)
1 TBSP Stevia

Bread Pudding
1 Cup Liquid Eggs
6 Slices of Saralee 45 Bread
1 Scoop Vanilla Whey Protein
1 Cup Unsweetened Coconut/Almond Milk
2 TBSP Natural Peanut Butter

- In a microwave safe dish, heat raspberries and 2 TBSP of water until soft
- Stir in stevia and chia seeds
- Let sit in fridge until jam-like

- Slice bread into cubes
- Coat casserole/loaf dish with non-stick spray
- Blend milk, eggs, PB and protein
- Place bread chunks in the dish
- Slowly pour liquid over bread
- Let sit overnight
- Preheat oven to 350
- Cook for 20-30 minutes
- Drizzle chia jam on top
