Protein Melba Toast

Protein Melba Toast






This recipe was an accident! I was making a double loaf of my protein bread and forgot to add the wheat bran! It turned out quite delicious and, when sliced thinly and toasted in the oven it's very similar to a Melba toast!

1 Cup Oats
1 Cup Liquid Egg
40 Grams Pea Protein (Approximately 4 TBSP)
1/2 Cup Fat Free Cottage Cheese
1 TBSP Stevia
1 TSP Salt
3 TBSP Psyillium Husks
1 TSP Baking Powder
1 TSP Baking Soda

-Preheat oven to 400
- In a high powered blender or food processor, blend ingredients (excluding baking powder/soda)
- Transfer batter to a large bowl
- Add baking powder/soda and blend thoroughly
- Lightly coat loaf pan with non-stick spray
- Even spread dough in pan
- Bake for 20-25 minutes

Before eating, cut a thin slice and bake it on a cookie sheet until crisp - I season mine with basil and garlic :)

Makes approximately 16 thin slices

OR - Cut slices thicker and eat them toasted with nut butter! It's seriously amazing.
