Protein Banana Loaf

Protein Banana Loaf



Don't expect dessert-like banana bread from this - it's more like a sweet breakfast bread, but is still quite lovely! Smear some natural nut butter and you've got yourself one awesome snack!


1 Cup Liquid Eggs
2 Scoop Banana Whey Protein (approximately 60 grams)
1.5 Banana (or one large banana)
1 Cup Oats
1/2 Cup Wheat Bran (possibly substitute with flax meal)
2 TBSP Psyillium
1 TBSP Cinnamon
1.5 TSP Baking Powder
1 TSP Baking Soda
*Stevia for a sweeter bread
1/4 Cup Water
* Banana Extract for a more pronounced banana flavour

- Preheat oven to 400
- Blend all ingredients (excluding baking powder/soda)
- Once smooth, transfer into a large bowl
- Mix in baking powder and soda
- Lightly coat loaf ban with non-stick spray or coconut oil
- Pour mixture into pan
- Bake for approximately 20 minutes
- Makes 8 servings

I find that my bread sometimes gets a crispy top and doesn't allow moisture to get out while cooking. If you're finding this, poke a few holes in the top of your bread to allow steam to release.
