Chocolate Chilli Truffles

1 TBSP Almond Butter
1 Scoop Chocolate Protein
2-3 TBSP Coconut/Almond Milk
1 TSP Coconut Flour
1 TBSP Flax
1/4 TSP Chilli Flakes
1/4 TSP Cinnamon
4 Squares Chirardelli Dark Chocolate 86%
(any dark chocolate - enough to coat each ball)
- Mix almond butter, flax, coconut flour and protein
- Slowly add coconut milk until taffy-like texture is reached (it can take a fair bit of kneading)
- In a bain-marie, melt chocolate
- Add chilli flakes and cinnamon to melted chocolate
- Roll batter dough into 15 balls
- Place balls on waxed paper
- Roll each ball in melted chocolate
- Place chocolate covered ball back on the waxed paper
- Top each ball with remaining melted chocolate
- Let cool

This recipe arose out of a need to bring portable protein snacks snowboarding! I wrapped the truffles individually with waxed paper, then aluminum foil. I kept them in a ziplock bag in my pocket. They were great!
