Blueberry Protein Pancake

Blueberry Protein Pancakes

Macros: Cals 238, Carbs 26, Fat 2, Protein 34, Sugar 7, Fiber 12


                         




1/2 Cup Blueberries (the smaller the blueberries, the better they stay in your pancake)
1/4 Cup Wheat Bran or 2 TBSP Coconut Flour (For a more authentic texture)
1/2 Cup Egg Whites/Liquid Egg
1/2 Scoop Vanilla Protein
2 TBSP Stevia
2 TBSP Vanilla Extract
2 TBSP 0% Plain Greek Yogurt
1 TBSP Physillium Husks
1/2 Cup Water


- Mix ingredients and let sit (allowing ingredients to bind - I usually let it sit overnight)
- Cook batter as regular pancake (makes 6-7 medium sized pancakes)
- I recommend cooking in coconut oil - Mmm!!
