Chia Seed Protein Pudding

Chia Seed Protein Pudding
Cals 184, Carbs 9, Fat 7, Protein 27, Sugar 0, Fiber 6

WOW - this is the easiest recipe in the world and it is so nutritious! It's so simple, you could pre-package the ingredients in a ziplock bag (liquid ingredients excluded) and just add water!  It's perfect for traveling or to keep at work/school!


1/8 Cup Whole Chia Seeds
1/2 Cup Water  (Depending on the size of protein scoop - you can always add more if you find it too thick)
1 Scoop Vanilla Protein Powder
1/4 TSP Vanilla Extract
Stevia to taste
Dash of mascarpone vanilla powder (not necessary but gives it a richer taste)
Dash of cinnamon (I kind of put tons - I'm a huge cinnamon fan!)

- Shake/mix water and protein until lumps are dissolved
- Add Chia seeds and flavours
- Let sit until thickened (an hour or so)
- Top with shredded coconut, fruit or nuts of choice.
-Stir/Shake every so often to ensure seeds don't "glob" together.

That's it! It basically makes itself! The longer it sits, the more water it will absorb. If you find that it's absorbed too much/want a larger portion... just add a little more water and let sit for a few minutes!

Makes one serving.

  1. what is "mascarpone vanilla powder"? It sounds good.

  2. To be honest, I'm not entirely sure WHAT it is... but it's vanilla in a powdered form and adds a lovely rich vanilla flavour :) It can usually be found along with other spices and extracts.
