Protein Bread Pudding



Protein Bread Pudding
Cals 275, Carbs 23, Fat 5, Protein 35, Sugar 4, Fiber 8
(With Oats added) Cals 350, Carbs 27, Fat 7, Protein 38, Sugar 4, Fiber 10




Oh my goodness, this is like french toast cake. It's absolutely delicious! The crunchy top, the fluffy, gooey inside... yummmmmm!!! I added oats to mine because I wanted the extra slow-digesting carbs for my pre-workout meal (I get REALLY hungry, otherwise!).  The macros are better without the oats and the texture is slightly better - but they're both wonderful and filling!


Pre-Baked

Ingredients:
6 Slices of Light Bread (I used Saralee 45- substitute with similar macro bread or Ezekiel bread)
1 Cup Egg Whites
1 Cup Unsweetened Coconut/Almond Milk
1 Scoop Vanilla Protein
*1/2 Cup Oats (Optional - I wanted the extra carbs pre-workout)
2 TSP Cinnamon
2 TBSP Stevia (more if you have a sweet tooth)
1 TSP Vanilla Extract
1 TSP Maple or Rum Extract
1/2 TSP Butter Extract



Directions:
Baked!

- Slice bread into cubes
-Spray casserole/loaf dish with non-stick spray
- Place bread chunks (and oats, if desired) in the fish
- Combine remaining ingredients in a blender
- Blend until frothy
- Slowly pour liquid over bread
- Sprinkle cinnamon on top
- Let sit over night
- Preheat oven to 350
- Cook for 20-30 minutes
- Optional - top with Walden Farm's Pancake Syrup


Makes two glorious servings :D
