Baked-Blueberry Proatmeal

Baked-Blueberry Proatmeal
Cals 327, Carbs 40, Fat 8, Protein 28, Sugar 9, Fiber 6








Liquid
2 Cups Brewed Plantain Coconut Tea
1 Cup Fat Free Cottage Cheese
1/2 Cup Egg Whites
3 TSP Stevia
2 Scoops Vanilla Whey Protein (I used Elite Gourmet Vanilla)
A few drops of maple extract and vanilla extract

Dry
2 Cups Quaker Oats
2 Cups Frozen Blueberries
Cinnamon

Topping:
2 TBSP Coconut Oil
3 TBSP Walden Farms Pancake Syrup

- Preheat over to 350
- In a rectangular casserole dish, layer blueberries, oats and sprinkle cinnamon on top
- Blend "liquid ingredients"
- Pour into casserole dish, over-top of "dry ingredients"
- Melt coconut oil and combine with pancake syrup
- Drizzle on top
- Baked until golden brown and liquid is absorbed
