Ricotta Protein Pancakes
Cals 191, Carbs 8, Fat 1, Protein 36, Sugar 4, Fiber 1





By far, these are the best protein pancakes I've ever had - at least the most authentic. An what's even better, they're basically made entirely of protein! Yes, that's right! These exquisite protein pancakes are flourless! Enjoy!

1/2 Cup Liquid Eggs/Egg Whites (either can work)
1/4 Cup Fat Free Ricotta Cheese
2/3 to a full scoop of Vanilla Whey Protein (Approximate 20 grams worth *in quantity not grams of protein*)
2 TSP Stevia
2 TSP Vanilla Extract
1/8 TSP Xanthan Gum
Pinch of Baking Powder
Pinch of Baking Soda
Walden Farms Pancake Syrup
*Optional coconut oil for cooking




Mix ingredients together
Let sit, until mixture thickens (I usually make it the night before and let it sit over night)
Cook as a regular pancake.
Drizzle with syrup

Makes approximately 5 pancakes (one serving)
