Apple Cinnamon Baked Oatmeal

Apple Cinnamon Baked Oatmeal
Cals 348, Carbs 39, Fat 8, Protein 34, Sugar 8, Fiber 6



Liquid
3 Cups Brewed Plantain Coconut Tea
1/2 Cup Liquid Egg/Whites
1 Cup Fat Free Cottage Cheese
3 TSP Stevia
3 Scoops Vanilla Whey Protein (I used Elite Gourmet Vanilla)
1 TBS Maple Extract
1/4 TSP Vanilla Extract
1/2 TBSP Cinnamon

Dry
2 Cups Old Fashioned Oats (for a more "cake-like" texture, use Quick Oats)
1 Apple - chunked
Cinnamon
Stevia
2 Drops each: Maple extract, butter extract, vanilla extract

Topping:
*Walden Farms Pancake Syrup (Optional but delicious)
1/4 Cup Almond Flour
Cinnamon
2 TSP Stevia

You also need some sort of 'non-stick' ingredient (coconut oil or Pam butter flavour)

Directions:
- Preheat over to 375
-  Put apple chunks in blender, pulse a few times
- Lightly spray frying pan with Pam Butter flavour or melt coconut oil
- Empty blender contents into the pan
- Season with "dry" ingredients (excluding oats)
- Saute until golden

- Lightly spray rectangular casserole dish with Pam butter flavour or coconut oil
- Evenly spread apple mixture along the bottom of the pam
- Evenly spread oats on top of apple mixture

- Combine 'liquid' ingredients in a blender
- Blend until smooth
- Slowly pour 'liquid' contents overtop of apples and oats
- Sprinkle/drizzle "topping" overtop of the casserole.
*Optional - For a crispy topping, top with melted coconut oil and/or honey
- Once liquid is mostly absorbed (but not entirely or it will dry out) broil until topping browns.
