Superfood Protein Pudding

Superfood Protein Pudding

There's no way around it - this concoction doesn't photograph well. Oh well! This Superfood Protein Pudding is *super* good for you so eat it anyway!

Because this recipe basically requires you to add water and shake, it's perfect for travelling, to keep in your desk, in the office, in your gym bag, locker, car, wherever it is that you are prone to snack-attacks! I'm going to pre-combine ingredients and keep them in a ziplock bag for my upcoming trip to the Dominican!


1/2 TBSP Flaxmeal
1 TBSP Chia Seeds
1 Scoop Vanilla (or chocolate) Protein Powder (I used whey, other protein sources would likely work)
1-2 TBSP Shredded Unsweetened Coconut
1 TBSP Cacao Nibs (or dark chocolate chips)
1/4 - 1/2 Cup Water (Depending on the size of your protein scoop, and some chia seed brands tend to absorb more liquid than others... has anyone else noticed this?)
Cinnamon and Stevia to taste (I find that the protein powder makes it sweet enough)

Mix, Shake and refrigerate!
Shake/stir every so often to make sure chia seeds haven't turned into a lump
Eat once ingredients thicken (takes 30 minutes - 2 hours, depending on the type of Chia seed)

This might also be good with Cocoa powder, but I haven't tried it :)
