Healthy Shepherds Pie

Healthy Shepherd's Pie

1 Package Extra Lean Ground Turkey (Can substitute with Yves Ground Round)
3 Cups Peas (Add Corn and/or Carrots if desired)
1/2 White Onion
4 TBSP Low/Fat Free Cream Cheese (I prefer Garlic and Herb but Plain works too)
1/4 Cup Nutritional Yeast
1 Head Cauliflower
1/2 TBSP Onion Powder
1/2 TBSP Rosemary
2 TBSP Extra Virgin Olive Oil
2 Cups Diced Tomatoes

- Chop onions
- Sauté onions with EVOO, Turkey and Rosemary
- When turkey is cooked and onions are translucent, add diced tomatoes

- Steam and drain cauliflower
-  Place Cauliflower, cream cheese and onion powder in a blender or food processor.
- Blend until smooth

- In a medium sized casserole dish, layer meat, peas and faux-tatoes
- Sprinkle nutritional yeast on top (and I like to put a little onion powder on top too!)
- Pepper to taste
- Bake at 400 for 20 minutes (or until faux-tatoes are slightly brown)

Makes 4 servings -- or 2 "Fit Femme" servings ;)
