Sweet Potato Muffin Tops

Sweet Potato Muffin Tops
Cals 73, Carbs 7, Fat 0, Protei 10, Sugar 1, Fiber 1




These were actually suppose to be 'timbits' LOL! Oh well, they're delicious either way :)


Muffin Top:

1 Baked Sweet Potato (pureed)
1/2 Cup Oat Flour (Oats blended into a flour)
1/2 Cup Vanilla Protein
1/4 Cup Liquid Eggs
1 TSP Baking Powder
Dash of Cinnamon

Icing
2 Oz Fat Free Cream Cheese (roughly a TBSP)
1 Oz Greek Yogurt (roughly a TBSP)
20 Grams of Vanilla Protein Powder (roughly 1/4 Cup)

Nutritional information based on 9 servings

- Preheat oven to 350
- Mix muffin top ingredients (excluding baking powder)
- Once throughly combined, add baking powder
- Lightly coat parchment paper with non-stick spray and place on cookie sheet
- Drop 9-10 spoonfuls of batter on tray
- Cook for 5-7 minutes
- While muffin tops cool, combine icing ingredients
- Stir vigorously until smooth
- Evenly divide icing among muffin tops
- Eat :D !

*Keep refrigerated*
